Sushi is my favorite food. I could eat it every day. I got the idea to use brown rice and other grains from Vegan Lunch Box. When I found Nori at the dreadful Wal-Mart, I decided to go for it!
So, I used half a cup of brown rice and half a cup of Bulgar wheat, simmered together in 2.5 cups water for 30 minutes. Once cooled, it turned out quite sticky. I sliced up cucumber, red pepper, avocado and shredded carrots using my beloved salad shooter. Then I laid it all out and rolled it up by hand. The nori was designed for hand rolls, but I cut it with a butcher knife and it worked pretty well. I got my sister a sushi kit and supplies for Christmas, so I'm eager to know how using a rolling mat compares. (L, get to it! Don't wait for me.)
The girls scarfed up their two rolls in no time. It's their favorite food, too. Both started eating it at about 1.5 years of age. There were no comments about it tasting different than restaurant sushi, though they were prepared that it would not be made with white rice. They watched me assemble and roll and cut their sushi, so now they know what goes into making it, minus the raw fish. S was a little disappointed I wouldn't be handling raw fish. I made two rolls and put them in a container for S's lunchbox tomorrow. Basically it gives her teacher's aid an inferiority complex. At the beginning of the year she was surprised by the foods S took for lunch. Compared to the normal school lunch of white bread sandwiches, fruit roll-ups, and Cheetos, I guess S's pepper slices and hummus are pretty different. It is different from what I ate as a kid, but not by much. I had more fruit and carbs, like peanut butter crackers, for lunch. I aim for more veggies for S. Better for digestion. So, her teacher's aid started complimenting her lunches right away. And S started sharing what we ate for dinner as well. When I visited one day the aid told me she wished she could get her daughter to eat like S. I recently heard she told S her family was trying to eat vegetarian. I guess S discussed that with her as well.

I started out eating veg sushi in high school, but quickly upgraded to fish. I did miss my sweet, sweet eel. Damn that stuff is GOOD! I'll have to wait until the next time I can afford wonderful Toyama.
